Spanakopita 

My mum and I made two spanikopitas and two fillets of salmon  for our neighbour, the vicar. He is having twenty people over for lunch!

Unfortunately, the gas bottle ran out while we were cooking the salmon- the vicar had to go down in his car to get another one.

I made the filling for the spanikopita by mashing up a whole lot of fetta cheese, ricotta, egg, lemon rind and spinach.

After that, I had the semi-fun job of painting the filo pastry with butter. We cooked it, then voilà! It smells delicious!
